Title: A couple of hot potato salads

BismAllah ..


Cold potato salads are very common.  We've all prepared it with variations in dressings and its combination with other veggies.  The commonest potato combinations in cold salads are generally carrot, peas and beetroot garnished with sliced boiled eggs and lettuce.

Hot potato salads have a different touch and flavor.  And no doubt, they are more uncommon than the cold potato salads.

Here are two very simple, wholesome and nice tasting recipes of hot potato salads.  Check them out. 


Simple Hot Potato Salad

Ingredients:

2 Medium   Potatoes cooked and cubed or cut in rounds
3 green onions chopped
Half red bell pepper, finely chopped
Salt and pepper
Pinch of allspice
Pinch of mustard paste & 1 tsp vinegar
1 tb sp oil (canola or corn)

Preparation:

Boil, peel and cut potatoes into cubes.  Don't boil them too soft.

Heat oil and put in all veggies and saute in stir fry manner.  Prevent burning.  Season and mix gently.  Remove from fire and the Simple Hot Potato salad is ready to be served.
 
The same can also be made without frying and without the use of oil.  That would be a simple hot boiled potato salad.  Just mix hot boiled potato cubes with vinegar, mustard and seasoning.  Then sprinkle it with red pepper slices and chopped green corriander leaves instead of green onions.

Italian Hot Potato Salad

Ingredients:

2 lbs potatoes 
5 - 10 green onions (Green Tops Reserved)   
2 red ripe tomatoes   
1 banana pepper chopped 
Half cup canola or corn oil 
Half teaspoonful crushed garlic 
Pinch of crushed red pepper (optional)
Salt and black pepper to taste 
Pinch of dried parsley to taste
Pinch of dried basil to taste

Preparation:

Boil potatoes till soft, but not mushy. Peel and cut like you do for regular potato salad.

Chop green onions, reserve some of the top (green part) to add to oil later. Add remaining green
onions to potato mixture.

Chop tomatoes and banana peppers, add to potato mix.

Place oil in a small sauce pan.   Add crushed or ground garlic to oil along with tops of green
onions.   Heat oil till it boils being careful not to let it burn.  Allow oil to simmer for approximately 5 minutes to get garlic and onion flavor through out.

Sprinkle salt and black pepper, parsley, and basil to potato mixture.

Add crushed red pepper (if used) to hot oil. Allow to simmer for a few minutes then bring to
a raging boil once again.  Be careful not to burn!   Pour over potato mixture. If done right, oil
should "sizzle" when it hits the tomatoes.

Mix well.  You can modify the spices according to your taste.

Note:  In the pic of Hot Italian Potato Salad, the potatoes have been boiled and sliced with the skin.  If you like, you can do that.  However, I personally prefer to remove the skin, even though it's considered healthier to retain the skin.

yummy yummy!  a potato lover like me loves just about anything with potatoes.  I'll remember this for a side dish.
