ORANGE CHICKEN STIR FRY

By Linda Larsen

This easy recipe is packed full of flavor. And because you use frozen peas and cashews, there's no chopping. Dinner will be onthe table in 10 minutes.

INGREDIENTS:

2 Tbsp. oil
4 boneless, skinless chicken breasts, cut into thin strips
1/2 tsp. salt
1/8 tsp. pepper
1 cup orange juice
2 Tbsp. honey
1 Tbsp. cornstarch
2 cups frozen baby peas, thawed
1/2 cup cashew pieces

PREPARATION:

Heat oil in heavy skillet or wok. Add chicken, salt and pepper. Stir fry until chicken is cooked, 3-4 minutes. Combine orange juice, honey, and cornstarch in small bowl. Add to chicken in skillet or wok along with frozen peas.

Stir fry 2-4 minutes until sauce thickens. Stir in cashew pieces and serve over hot cooked rice or noodles. 4 servings

P.S.  the recipe says chicken pieces will be cooked in 3 to 4 mins. but I don't think that's enough time. should be cooked longer, as per my taste I would say, 15 to 20 mins.  but it depends upon individual choice.

And sorry guys .. no picture for this one.  Linda Larsen posted no pics

However, here is one from Pinterest, just to give you an idea how it should look.  This one is stir fry with chicken, orange and asparagus.  Good idea adding asparagus.  Adds color to the dish.  Asparagus is a wholesome green veggie.  If you don't relish it, replace it with green beans or green bell pepper.
