Title: Zarda or sweet rice (dessert)
Post by: Ruhi_Rose on January 12, 2010, 03:03:52 am
Sorry for always thinking about food  ;D  but it's my weakness ..

Sister Zeynab would know about 'zarda' (sweet rice) very well.  But for everyone else who browse here, ever heard of sweet rice?  The ususal concept of rice is a dish seasoned with spices and salt.   And dessert made with rice brings the picture of rice cooked in evaporated milk (known as 'kheer' in Urdu).  But if none of you have heard of another kind of rice dessert called 'zarda,' well, here it is.

Zarda is not a very rich dessert, however, it's a formal one and usually prepared on occasions such as weddings and large parties.

Best of all, I have the recipe on YouTube, so it will be ever so easy to follow.  You can see, it's a simple dessert with simple ingredients requiring short cooking time.

Variations:  If you want, you can omit garnishing the Zarda with those broken white pieces of sweets or mithais.  Instead garnish it with some extra nuts and raisins or simply don't garnish at all because the nuts you mix with the Zarda while cooking give a good appearance.

O my Allah!  lovely.  I adore zarda.  but never knew how to prepare it.  This is good info.  I recall during my 4 or 5 yrs of stay in Pakistan in 1980s, I had eaten this dessert quite often.  Really fantastic!

Thanks sis.

And btw - 'food lover sis'  :D  there's another great Pak dish called 'yakhni pulao' i.e. rice with lamb or chicken where rice is cooked in the meat stock.  Can u put up that recipe pls.  I'm dying to cook it but don't know the method at all.  If u can put it up through youtube, like this one, it will be easier for me to understand.

thanks again sister  :)
