Chicken yakhni pulao = Chicken stock pilaf.  This means that in this rice & chicken dish, the rice is cooked in the chicken stock with mild (preferably unpowdered) spices.  The dish is light, nutritious and amazingly delicious. 

Below is the video recipe of chicken yakhni pulao.  Beneath it, I am also mentioning the recipe in writing so that those who don't know certain Urdu terms of Pakistani ingredients (including sister Cat  :D ) can check the written recipe for clarifications.

Written recipe of the same

For chicken yahkni:
Half of one large onion.  Keep other half for cooking rice.
Assorted 'garam masala' pieces i.e. cardamoms, cloves, cinnamon and bayleafs
Garlic and ginger paste
Corriander seeds
Salt
 
Put chicken pieces in cooking container with the above spices and add water, enough to almost cover the chicken (not more than 4 cups).  Cook on medium heat for 30-45 minutes.  When chicken is cooked, drain the yakhni (stock) in a bowl and keep aside.  Also keep the chicken pieces aside.
 
Rice:
Rice 2 cups
Cummin unpowdered
Garam masala assorted as above
A little oil
Salt
 
Heat oil in a cooking container.  Add cummin (zeera) and assorted garam masala and let it crackle for a while.  Then add onion slices (the other half) and fry till golden brown.  Then add the yahkni (chicken stock) to fried onions.  Measure it.  If it's less than 4 cups, add a little water to make it 4 cups because liquid should be double of the quantity of rice.  Adjust salt.  Also add chicken pieces.  When water starts boiling add rice.  Cover until water has dried and rice is cooked.  When water almost dries, lower heat, cover & cook the last 10 minutes on simmer.  Now rice should be ready.
 
Serve with green corriander paste (chutney), plain beaten yogurt mildly seasoned with spices(raita) and plain salad made with chopped lettuce, tomato, raw onions and sprinkled with little fresh lemon juice (known as kachumer in Urdu).

Ya Maash'Allah!  :Jumping:  and thanks for being so prompt, sis.  I was waiting for this one.  As I see, it's pretty simple in that it requires simple ingredients which is always present around the home.  InshAllah, I'll try it out tomorrow for our dinner and then give the feedback regarding the outcome  :D

turned out fantastic.  it was just a family dinner, no guests but everyone loved it.   thanks to u sis.
