Title: Bosnian cream beef Post by: Zainab_M on July 13, 2010, 05:14:08 pm BismEm
Just a small diversion from our usual health-food conscious recipes :) It's Bosnian cream beef. If you like, you can use lamb or chicken as well. If you are using beef, opt for veal. That would be better. This isn't really a rich main dish. Only the cream is the 'eyebrow raiser.' As long as you keep it a 'once a while' recipe, it's okay. After all, taste buds shouldn't be totally ignored either :D Here we go, starting with the mouthwatering pic of Bosnian cream beef Ingredients Veal cubes, boneless 1 kg Potatoes 4, peeled and quartered Sour Cream half cup Heavy Whipping cream half cup Milk quarter cup Fresh corriander leaves for garnishing Garlic and ginger paste 1 tb sp Salt and black pepper as desired Cumin powder 1 tsp Allspice 1 tsp chili powder quarter tsp Corn oil 2 tb sp Preparation Boil the meat with ginger & garlic paste for about one hour till almost tender. Save about half cup stock. Remove meat from the stock. Cut up potatoes into chunky pieces. Put meat and potatoes in a baking pan, and mix in all spices, corn oil and meat stock. Mix well with a wooden spoon. Cover with foil and bake at 400 degrees till potatoes are tender. Should take 30 to 40 minutes. To prepare the cream sauce while the meat and potatoes are cooking in the oven. Mix well the sour cream, whipping cream and milk in a bowl. Season with salt and pepper. If any bit of meat stock is left, you can mix it with this cream mixture. Then, after the meat & potatoes are out of the oven, pour this cream sauce over the baked meat and potatoes. The sauce, when poured over, will heat up and thicken. Garnish with fresh chopped coriander leaves. That's it! Now enjoy with dinner rolls or onion buns or any bread of your choice, and a bowl of salad. Title: Re: Bosnian cream beef Post by: Ruhi_Rose on July 14, 2010, 12:12:58 am Aw sis! what a fab recipe!!!! teethsmile My husband and kids will go berserk over this. Actually you are right, except for the cream, there's nothing heavy about it. InshAllah, I'm gonna try it this weekend :D Half cup sour cream and half cup whipping cream would make a total of 1 cup cream. So, that wouldn't be too rich for the entire dish. I suppose, a dish of 1 kg baked meat with 4 or 5 potatoes would serve three or four people. So the consumption of cream per individual would be quarter cup approximately, right?
Title: Re: Bosnian cream beef Post by: Zainab_M on July 15, 2010, 12:38:44 am Salaams and hi sis! :) glad u liked it. After all, u r the cooking expert :D Your quantitative analysis of cream sounds right to me. If the dish with the given measurements of ingredients is being shared by 4, the amount of cream consumed by each would be little.
However do keep in mind .. it can serve 4 if there's a little of something else to accompany it e.g. a large bowl of salad and some boiled veggies like frozen peas + carrots or some such accompaniments. If it's just the main dish with bread, then everyone will gorge at it and might not be enough for 4. In that case you will have to probably make with 2 kg meat and increase all other ingredients accordingly. Title: Re: Bosnian cream beef Post by: Ruhi_Rose on July 17, 2010, 03:23:45 am hmmm, u r right. If a main dish is the only thing to eat for dinner then 1 kg meat might fall a bit short .... we are 4 of us at home, and sometimes 7 when my parents along with my sister drop by. With 7 people I'll definitely need 2 kg meat otherwise 1 kg but with some salad etc. Thanks sis .. :)

I got 6 kids at home, my husband and me, and of course the frequent dropping in of family & friends. But even if I exclude guests, our kids, though so young, have firey appetites :D When they are really hungry, between just two of them, 1 kg meat can get polished off in no time. So if I cook this on a 'hungry' day for my family of 8, I guess I'll need 4 kg meat .. at least! ;D
