Title: Carrot delight

Carrot delight is considered quite a delicacy in Pakistan.  It's a very popular dessert, being a mix of carrot and rice pudding.  But the predominant ingredient is carrot, so it's called carrot delight.  In Urdu it's called carrot kheer or gajjar ki kheer.   Gajjar is the Urdu term for carrot.   An appetizing picture of carrot delight is here for you to see.

Now, here's how you cook this.   

Ingredients

Carrots 4 grated
Rice quarter cup, soak for 1 hr
Milk 1 liter
Cardamoms 4
Kewra essence 1 tsp
Almonds and pistachios (blanched & crushed or sliced) quarter cup
 
Preparation

Fry the grated carrots lightly in a little oil (corn oil or canola oil).  Then add about 1 cup water and boil till carrots are a little soft and water is dried.  Keep aside.  Put milk in a pan and bring to boil.  Lower the heat.  Add rice, cooked carrots, cardamoms and simmer till thick, stirring frequently and scraping the sides.  Then, add sugar and kewra essence.  Allow to thicken a bit more, stirring for a couple of minutes.  Remove from cooker.  Garnish with nuts.  Put it into a dish and cool.  Then refrigerate.  Serve cold.

P.S. 
In the picture above, the garnishing is done in a slightly different way, with almonds only, blanched and halved. 

Also, I've made this 2 or 3 times.  It doesn't come as orange in color as seen in this pic.  It's more a combination of orange and white streaks.

u know what, I've eaten this dessert.  we have a pakistani friend and client of our products.  My dad and I were invited to his house for dinner a couple of times.  Once we had this carrot and milk dessert.  It tasted grand.  But it's got another name too .... some pakistani name, I forget, which I heard my friend and his mother mention.  Something similar to 'gajjer' as u mentioned, but some other term.

That other term of Urdu used for carrot delight is gajrela.  It's derived from the word gajjar meaning carrot  :D
