I tell you folks, this simple little salad is truly refreshing in warm weather. It’s a perfect addition to a summer potluck .. as a side dish, of course. Ingredients 3 medium red or regular potatoes, peeled Half cup spring green onions, chopped Finely chopped fresh corriander Salt and pepper for seasoning Dressing of your choice. I generally use cucumber dressing. Directions Boil the potatoes and when cool, cut into quarters. Place them in a large bowl. Season with salt and pepper. Add spring green onions. Sprinkle the dressing and mix gently a couple of times with a wooden spoon. Refrigerate. Eat when very cool. It's very nice. I made potato salad with green onions and green beans. The green beans do not enhance the taste of the salad too much, but green onions really go well with potatoes and the dressing. I too used cucumber dressing because it doesn't contain rennet so I'm more at ease. Thanks sister Rose. |
