Title: What's the difference between chocolate cake & chocolate fudge cake?
Post by: Ruhi_Rose on January 28, 2012, 04:17:02 am
I was thinking of making something unusual for my little son's upcoming birthday early March.  I had chocolate fudge cake in mind which I know he would love.  But the problem is I couldn't come across the right recipe yet ..... rather, I'm sure the ones I saw through google had something missing.  All the recipes I read which said "chocolate fudge cake" were actually no different from the usual chocolate late.   They all start with sieving of self-raising flour, cocoa powder, sugar and pinch of bicarbonate soda mixed with beaten eggs, butter or oil, little milk and sometimes syrup too.  Bake that for 25 or 30 minutes and then put the coating which too is made of the usual cocoa powder, unsalted butter, icing sugar and a couple of drops of milk.   All recipes were more or less the same with slight differences in the style of cooking, that's all.  Now isn't this exactly how we would make the traditional chocolate cake?

Would like some guidelines of real chocolate fudge for a cake .. if any of you guys know about it.

I get your point sis.   Though chocolate fudge (http://muslimvilla.smfforfree.com/index.php?topic=2789.0) by itself is very different from pure chocolate, but when you're making a chocolate fudge cake, there's basically not much difference between chocolate fudge cake and the usual traditional chocolate cake.   To put it briefly chocolate fudge cake is a wonderfully rich chocolate cake.  Just bake a rich dark chocolate cake and pass it over to your guests as "chocolate fudge cake."  They'll enjoy it and you'll get your full share of compliments, I promise :)

However, according to some Italian recipes the traditional chocolate fudge cake claims to be different or slightly different.    My husband's sister has made it a few times which she learned while attending a baking course organized by an Italian lady.  The way she makes it, it's pretty fudgy and different from the regular chocolate spongy cake.

I will, InshAllah, post the recipe in a few days when I get it from my sister-in-law.  But I can give you an idea.  She uses semi-sweet broken chocolate bars, very little flour and just egg whites no yolks.  All that sounds different, doesn't it?   and it does taste somewhat different too.  Like I said, InshAllah, I'll get the exact recipe later and post it on the dessert board.  Not to worry, it'll be well in time before the little guy's birthday :)
