My 8-year-old daughter's omelette recipe which she loves to make every Saturday morning for brunch :D (http://i.imgur.com/vBptw1U.jpg) Ingredients: 2 eggs 2 tbsp. milk 1 tbsp. chopped onion 2 tbsp. diced tomatoes 1 tbsp. cheddar or mozzarella cheese 2 tsp fresh chopped coriander leaves Half tsp ginger and garlic paste Pinch of tumeric powder Salt and pinch of pepper to season 1 tsp cooking oil Directions: Heat the skillet on low heat for a minute. Pour oil and turn the frying pan on both sides by holding the handle so that the oil spreads on all sides of the pan. Whisk eggs and milk until they start to foam a little, approximately 3 minutes. Add salt, pepper, tumeric and ginger/garlic paste. Pour the beaten eggs into the pan. With a small spoon gently stir the egg mixture in the pan so that it spreads evenly. Cook over medium-low heat for about 4 minutes, until bottom is golden brown and top is almost set. Sprinkle cheese, onions, tomato and coriander over the top. Then, either fold the omelet in half with a spatula or leave it in the same rounded shape as seen in the pic. Cook for about 1 more minute. Then carefully lift it with the spatula and put it in a flat plate. Serve with sliced toast or croissant. Can also be had with french fries or left over kebabs or cutlets. And yeah, when combined with french fries and some leftover dry foods like kebabs or cutlets, it's a great quick-fix meal by itself. Give a thumbs-up to your daughter from me :D Thumbsup
