Title: Green Lentil Stew, Moroccan style

Salams and hi folks.  Did you know that green lentils are single most wholesome food you can get at the cheapest cost?  They're like all-in-one kind of food.  An excellent source of folate and dietary fibers.  Additional nutrients include  copper, phosphorus, manganese, iron, protein, vitamin B1, zinc, potassium and vitamin B6.  Wowie!  What an impressive array of health benefits!!   Diet experts say that in just 100 grams of green lentils you can get nearly 80% of your daily fiber requirement.

That brings to mind the finger licking green lentil stew, basically a Moroccan recipe.  So let's get started. 


Ingredients:

1 and 3-quarter cups green lentils (soaked in water overnight)
2 cups chopped onions
2 cups chopped carrots
1 teaspoon garlic & ginger paste
2 tbsp cooking oil (corn, canola or olive)
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon turmeric powder
2 teaspoon red papkika
Quarter teaspoon allspice powder
Quarter teaspoon pepper ground
Salt to taste
1 Halal soup cube (veggie or chicken) dissolved to make broth in 2 cups of boiling water
2 cups water
4 fresh tomatoes diced
1 cup chopped fresh coriander
2 tbsp fresh lemon juice


Method:

Heat the oil.  Add onions.  Fry until very light brown.  Then add carrots, garlic, cumin, coriander, turmeric, allspice, paprika, pepper and salt.  Cook for 5 minutes.  Next, add green lentils and cook everything together on simmer or a bit higher until lentils and carrots are tender.  Should take approximately 45 minutes to an hour.

Just before serving stir in chopped fresh coriander and lemon juice.   

Moroccan green lentil stew is ready!  :)   Eat with buns or croissants.


Optional:  If you like, you can add peeled potatoes, cut into cubes, while stirring in the carrots and spices.

Alhumdulilah, this really looks yummy and delectable  :)   Must show it to mom and sisters so they can make it.

How about adding chicken with it?

Yeah brother .. chicken can be added.  In that case I would cook the chicken pieces separately (preferable boneless) and when lentil stew is ready, mix chicken with it.

Love it.  Green lentils are like part of my daily diet.  I often make lentil rice using green lentils.   Nice to know they're so nutritious .. more than I thought.  Alhumdulilah.   

Many thanks for the super recipe.  I must try this, it will be a change from lentil rice.

Yes sis, lentil rice (khitcheri) with green lentils can be fantastic.  I've also made that many times, my folks adore it.  And if you try out this stew, it will certainly be a welcoming change.

SubhanAllah, ya Rab!  :)   I adore this dish.  As br. TS asked, I would also like to add chicken.  Sis Ruhi, is it necessary to cook it separately?  How about putting the chicken pieces while adding the lentils?  Boneless chicken, particularly white boneless which we usually have, gets tender very quick .... almost as fast as green lentils soaked overnight.

Probably yes sis.  My sister makes this very often and twice she made it with meat, once with lamb and another time with lean beef.  She prepared the meat separately then mixed it with the prepared lentil stew and it tasted great.  That's why I suggested to cook chicken separately.

Well yeah, lamb or beef should be made separately cause these take much longer to get tender and then the lentils might get overcooked.  But cooking time for chicken is more or less the same as green lentils so I suppose I would prepare it together.

hummmm, sounds fine.  Just remember to adjust some of the spices .. ground spices .... accordingly.

Yes, right ....
