Title: All-purpose Cheese Sauce

This is one real handy stuff.  It can be used in an array of baked and unbaked foods, starting from non else than the simple 'Macaroni & Cheese' we so often love as a side-nibble for a quick lunch of sandwiches, burgers or soups.  And then there are so many main dishes that turn sophisticatedly delicious with cheese sauce.   For example, chicken and corn with cheese sauce, baked or unbaked.  This is my favourite.  InshAllah, I'll put this recipe soon.  Dishes like Irish Stew and Chicken Ala King taste still better if you use a mild cheese sauce instead of the flat tasting ho-hum white sauce.  Last but not least, a nicely prepared cheese sauce with a dash of chilli can make an excellent dip for French fries and plain tortillas.  These are just a few uses of cheese sauce to name.

Now, check the following recipes for preparing this much needed sauce ...


CHEDDAR CHEESE SAUCE

INGREDIENTS:
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon ground black or white pepper
1 1/2 cups milk
1 cup grated sharp Cheddar or smoky flavor Cheddar cheese
PREPARATION:
Melt butter; remove from heat. Stir in flour and seasonings. Gradually add milk, stirring until well mixed. Cook over low heat, stirring constantly, until thickened and smooth. Cook for 5 minutes longer; add cheese. Stir until smooth and well blended. Serve with pasta or vegetables.
Makes 2 cups.


EASY CHEESE SAUCE

INGREDIENTS:
3/4 cup evaporated milk
1 cup finely grated process American cheese
pepper, to taste
paprika
PREPARATION:
Heat milk in a heavy saucepan until steaming hot; do not boil. Stir in cheese, heating and stirring until cheese starts to melt. Remove from heat; stir until all cheese is melted and sauce is smooth. Add pepper and paprika, to taste.
Serve hot with macaroni, on vegetables, or as a sauce for hot dogs or sandwiches.
Makes about 1 cup of cheese sauce.

Hummm .. and not to mention what a handy item cheese can be by itself in the refrigerator of any household.  That yummy cheese sandwich and the yummiest of all, the grilled cheese sandwich!! Or just cheese and bread can work wonders on your taste buds if you're really hungry.  It's a blessing particularly on those days when I'm overwhelmed with laziness and just not in the mood to go to the kitchen for cooking a compelte meal. 

However it's important to mention that hard cheese like cheddar or mozarella is usually high in saturated fat.  Those made with skimmed or partly skimmed milk are lower in saturates, yet not fat-free.  Soft cheeses like cottage and ricotta are much lighter in calories.  But since we don't consume too much cheese when prepared in the form of cheese sauce, I wouldn't think a lot about the consumption of fat while preparing cheddar cheese sauce.  By the way, cottage cheese also makes excellent cheese sauce.  I always use cottage cheese sauce for preparing Lasagne.  The method is the same as chedder cheese sauce.
