one third cup lemon juice Disslove jelly in one fourth pint hot water. Add lemon juice. If necessary, make upto half pint with extra cold water. Leave to cool till almost set. 1 readymade pie crust shell 12 oz cream cheese half cup sour cream half cup castor or powdered white sugar Mix cream cheese with little of sour cream, sugar and the almost set lemon jelly. Blend well. Then turn into the pie crust. Spread remaining sour cream evenly over it on top. Refrigerate still set. Decorate with lemon slices. ~~~~~~~~~~ If readymade pie crust is not available, substitute it with the following recipe Refrigerate the cheesecake as mentioned above after blending. Do not decorate the top now. 4 oz digestive biscuits crushed (about half cup) a little brown sugar (optional) 2 oz vegetable oil or melted margarine Mix together crushed biscuits, sugar and oil, and spread it over the cheesecake about an hour or so after refrigeration. Then chill for another one hour. Next, remove the cheesecake from the fridge and dip the cake tin in warm water for a few seconds to loosen the cheesecake and invert onto a large flat serving plate. Now spread sour cream on top evenly and decorate with lemon slices. ~~~~~~~~~~~~~~~~~~~~~~~~~ It's simply delicious. Only remember, this is anything but a health food. That was quick :) great recipe. simple and easy to follow. even i can manage it, teethsmile and the pic is great too. u said to spread sour cream on top. the pic shows jam or mashed jelly. you're welcome. yes, i know the top isn't coated with sour cream as mentioned in the recipe. that's becoz this pic is from another recipe but it's also lemon cheesecake. my pic is not online so i'll have to first scan it, save it in my computer and then upload it here. i was a bit short of time when i was posting this recipe yesterday so i'll put the original pic later .. that is, if the scan result is good.
