Chicken breast 1 lb approx. - cut into bite size pieces
I small cup chopped onions

Put chicken and onions in a thick based pan and cook for a while, dry.

1 cup chopped bell pepper, green / red or both
Desired spices for seasoning

Add chopped pepper to chicken and onions.  Cook for a while.  Keep aside.

3 tomatoes
Some corriander leaves, fresh
1 can chickpeas

Make tomato paste by chopping the tomatoes and cook with minimal oil.  Then add chopped corriander and chickpeas.

1 cup rise (uncooked)
 
Mix tomato and chickpea paste well with rice.

4 flour tortillas
Some grated cheese
Salsa dip

Grease baking dish with cooking oil.  Spread 2 tortillas at te base of the dish, side by side.  Then spread rice and tomato-chickpea paste.  Then spread the other 2 tortillas over the rice & tomato paste.  On top of this, spread the chicken and bell pepper mixture.  Spread grated cheese over this.  Over the cheese spread a layer of salsa dip, and over the salsa spread another layer of grated cheese.

Bake uncovered in 350 degree oven for half hour


Note:  It might be advisable to half cook the rice before mixing with tomato paste.  And also to half cook the chicken before cooking it dry and putting it in the oven.

yep it does.  if u check the ingredients step by step you'll find no trans fat stuff, and preparation is with minimal of oil.  except for some grated cheese, all ingredients r low calories items.  you can substitute flour tortilla with whole wheat or whole grain tortillas.
