These never fail pancakes will become a family favorite. With this recipe you can become a pro at making pancakes. Top with real butter, pure maple syrup, or jams and preserves.  However, the "old-fashioned style" says to roll pancakes with jam, marmalade or honey when cooked, and sprinkle with sugar and a little lemon juice.  For a more rich pancake, lemon juice can be substituted with whipped cream and roasted almond pieces. 

Remember, this isn't a breakfast pancake but pancakes for dessert.


1 and a half cups sifted flour
Half tsp baking powder
Pinch of salt
1 egg beaten
Approx 2 cups milk
A drop or two of vanilla essence
A little fine sugar, approx 3 to 4 tsp
Oil, melted butter or margarine for frying


In a mixing bowl, combine flour, sugar, baking soda and salt.  Add beaten egg, milk and vanilla and mix well with a wooden spoon until very smooth.  Lightly greast fry pan or griddle and heat.  Fry turning sides till bubbly.  Lightly brown both sides.  After it's done, roll if desired.  If you would like to spread some filling like jam or marmalade, spread it before rolling.  Can be decorated with strawberries, peaches or pineapples.


This isn't exactly a "health food" but compared to most other desserts, it's much lighter.

This is just so, so excellent!  My mom used to make it when we were kids.  Nowadays this traditional dessert pancake has become almost unknown.  The only kind of pancake people eat and make is the usual thick round breakfast pancake doused in syrup which is so different from the traditional one.  I still make this pretty often so to let my kids know what real pancake is Smiley

And yeah, I hate the modern breakfast pancake.  That really shouldn't be called pancake.  It's something quite different.
