.. it takes minutes for that plate to get empty.  It's delicious!  Apart from serving as an excellent brunch, this is by far the most popular and commonly cooked makeshift meal for all times and by everyone.

Vegetable Omelette
2 eggs
1 red tomato
1/4 green pepper (large)
1 red onion (small)
1 teaspoon light butter
salt and black pepper to taste
Dice tomatoes, green peppers and red onion. Don't worry about the onion being too spicy, after cooking there wont be any heat left but lots of fragrance!

Place in bowl, whisk with eggs. Add pinch of salt and black pepper. Mix well.

Heat non-stick pan over medium fire. Throw in teaspoon of oil.
Before oil melts completely, pour in the egg mix right in the center. (This makes the butter spread to the edges along with the mix.)

Cook till browned on underside, carefully flip omelette.  You can then transfer onto a plate.
Now eat! Smiley
1) You can use grated chedder cheese with the vegetables.
2) Green pepper can be replaced by chopped green corriander leaves.
