Salaams and hi folks! Summer being right down the corner, here's a quick cool dinner treat. It's been my favorite since I was a kid and now I've introduced it to my family too. It's really got the better of them and they go nuts if I don't make this at least once a week.
It's simple and wholesome, low in calories and delicious. The only bit of cooking you need to do on the cooker is to prepare the chicken. Just read and follow the steps below and you'll soon become an expert in chicken & pineapple salad.
Ingredients: 1/2 cup mayonnaise or salad dressing
2 tsp. prepared mustard
2 cup chicken - cooked & shredded
1/2 cup frozen peas
1 tbsp. onion, chopped fine (optional)
1/2 cup diced boiled potatoes
1/4 cup green pepper, chopped
1 (20 oz.) can pineapple tidbits
1 (11 oz.) can Mandarin orange sections
Method: Boil the chicken till fully cooked with spices of your choice. When water dries up, allow the chicken pieces to cool a little. Then remove the meat from the bones. If you are using boneless chicken, just break the chicken pieces into irregular medium size shreds. Usually I try to use boneless chicken breast for this dish. It turns out best with boneless chicken breast.
Drain the canned fruits and refrigerate.
Mix mayonnaise and mustard.
Stir in rest of the ingredients. Cover and refrigerate.
Just before serving add fruit.
Decorate with lettuce leaves and sliced red tomatoes.
Now, sit down and enjoy this lovely dish with fresh dinner rolls and a glass of cold Pepsi.
These cold dishes are a lot healthier than the usual summer barbacues in the backyard. Barbacue parties make us consume too much red meat containing burnt portions from the grill that make it still more unhealthy. Instead, this summer try a variety of salads starting with this one.
And ..
Here's a variation for chicken and pineapple salad. You can call it 'chicken and pineapple tossed salad.'
2 cups cold cooked diced chicken
1 can (8 oz.) pineapple rings, diced
1 cup diced celery
1 red-skinned apple, chopped
2/3 cup raisins
1/2 c. chopped walnuts
Mayonnaise to moisten
Salt & pepper to taste
Toss all ingredients. Chill. Serve on salad greens.
This salad is even lower in calories as it contains less mayonnaise. While choosing the ingredients, you can select your own re-variations.

Dinner Tonight. Their food decorations are often out of line with what we might consider to be the best. But to give you an idea, this is how a tossed chicken & pineapple salad would look, though mine looked quite different as I kept the chicken shreds much shorter.
