Kabsa is a rice dish and often regarded as the national / staple food of Arabia.  In other gulf states like Kuwait, Bahrain, Qatar etc. it's known as Majboos or مجبوس

Kabsa has several variations but the recipe below is the commonest and most popular.

The Bedouins are said to prepare Al-Kasba is the most traditional method known as Al-Mandi.  This utilizes ancient techniques of cooking, first employed when man discovered fire. A lamb or chicken, prepared with rice, spices and water is barbecued in a deep hole in the ground that is covered while the meat cooks.    However, let us try it in our modern ktichens Smiley 

Here's the recipe.  It's pretty simple .. rather it can be simplified much if desired  Cheesy



KABSA   --  كبسة‎

(Made with Chicken)   


1 and a half cups  rice
1 frying chicken, cut into eight pieces
1 cup corn oil  (or less if desired)
2 medium onions, sliced
Garlic paste, 2 tsp
1 can tomato puree (2 ½ ozs.)
2 medium tomatoes, chopped
2 medium carrots, grated
grated peel of one orange
6 cloves
6 cardamom pods
4 sticks cinnamon
4 tbsps. raisins
4 tbsps. blanched almonds 


Wash the rice, soak in water and keep aside.   

Saute the onion in oil until it begins to brown. Add the chicken pieces, tomato puree, chopped tomatoes and garlic and stir for about five minutes over low heat. Then add 3 cups hot water, remaining spices, grated carrots, orange peel,salt and pepper to taste. Cook about 20-25 minutes, until the chicken is tender.

Carefully remove the chicken pieces from the gravy (or sauce) and keep aside in a separate plate. Add the rice to the gravy and cook slowly over low heat for about 15 minutes, or until cooked dry. Arrange the chicken on top of the rice  and decorate with the raisins and almonds.   

Serve hot and enjoy the meal of a lifetime!  weldem
 








Also, Kabuli pulao of Afghanistan isn't too different.

My my!!!!  isn't this a mouth-watering dish.  Despite being traditional, it appears pretty simple.  I read it at the right time.  I've got some frozen chicken in the freezer which I was meaning to cook within the next couple of days.  I'll try this out.  However, I think I'll need to put in a few additional spices like pinch of cumin powder and black pepper or chilli .... how about that?  otherwise it might taste too bland for my taste Smiley

Yeah this is a good dish but it's not "meal of a lifetime."  The saudi babas eat it all the time.  It's a common dish in their household.  The rich ones frill it up more elaborately while the poorer ones keep it simple.  But it's kabsa all the same  Cheesy
