Long time no foods ....

Okay, so here's my orange marmalade cake recipe.  It might not sound brilliant, but tastes more than just brilliant.

I hope you guys are gonna have the patience to understand and approve of my cooking shortcuts  Grin

Well, I used the Betty Crocker yellow cake mix for the batter.  You need some cooking oil, eggs and a little milk or water.   Quantities of these ingredients are mentioned in the label.  Additionally you will require a jar of orange marmalade, pinch of cinnamon powder, 1 table spoon lemon juice, handful of walnuts and a tin of white vanilla Betty Croker cake frosting.

Start making the batter as instructed on the cake mix label.  Then add the cinnamon powder, lemon and walnuts.  Mix with the batter.  Lastly add about 3 or 4 tablespoons of orange marmalade and fold into the batter.  Spread into the cake tin and bake for 25-30 minutes.  But keep checking after 20 minutes.  Usually Betty Crocker cakes are ready in 25 minutes.  Test it by inserting a toothprick to check if its fully baked.

Let it cool.  Decorate with white frosting and on top of the cake, spread the remaining orange marmalade over the frosting.  To make it easier to spread the marmalade, you may need to beat the marmalade with a fork and add a couple of teaspoons of warm water.  It should look like the pic below. 

If you like, you can divide the batter and bake it in 2 separate baking pans, and then sandwich them together with frosting or marmalade while decorating.

If you wanna bake a simpler and lighter one without frosting, you can also bake the batter as directed in a loaf tin and then just spread some marmalade on top (no frosting) as in the pic below.

Loveliiiiiii .....  Tongue  and good idea using betty crocker yellow sponge cakemix  Cheesy  that would save a lot of time instead of making the batter from scratch. 

Btw, I've got an orange cake recipe (not marmalade but just orange) with candied orange decoration.  InshAllah, I'll put it up after Ramadan.  It's a bit elaborate and I'm sure no one will get the time nor will anyone want to waste that much time on it during Ramadan.  I would think, u can use a yellow cakemix for that too to prepare the batter.
