This is really one of those appetizing, mouth-watering, quick, simple and nutritious all-in-one recipe.  And except for the chicken, it has quite a lot of variations too.  That makes it still easier to keep it as an unplanned dinner menu.

You can use a smaller chicken if you so desire.  Other options are in brackets of the ingredient list and also at the end of the recipe.

Relish dot com   Excuse me, a piece of chicken looks a bit burned and I always try to avoid that.


1.8kg chicken cut in the usual pieces, removing excess fat
2 tablespoons extra virgin olive oil (can even use canola or corn oil)
8 whole cloves garlic  (can also use 2 tsp crushed garlic)
3 medium (600g) red bell pepper, quartered
12 baby (500g)  potatoes
salt and freshly ground black pepper
2 medium (400g) red tomatoes, skinned, seeded, quartered (can even keep the skin)
cup (180ml) water  (if you think you need to add more, please do so)
cup chopped fresh flat-leaf parsley  (can also use chopped corriander)


Preheat oven to moderate (180C/160C fan-forced).  Wash and pat chicken dry with paper towel.

In an ovenproof dish, put the chicken pieces, pour the oil over it, add garlic paste, bell pepper and potatoes.  Also season with salt and pepper and add the water. Bake, covered with an aluminium sheet for 30 minutes, turning chicken and vegetables a little a few times. Then add tomatoes, bake, uncovered, further 15 minutes or until chicken is cooked through.  Before removing it from the oven, just for one minute or so, it's a good idea to put off the bake and put on the broiler.  Keep the dish under the broiler for about one minute.  It gives a nicer color.   Serve warm with dinner rolls, croissants or begels.  Enjoy and thank Allah for His great blessings!

More options:
You can I add oregano, thyme, and basil for a slightly different flavor, if you like.  You can also add a few thick green chillies for a different look and hotter taste.  Those interested in keeping it less bland can use cummin powder, corriander powder and even a bit of chilli powder.  Feel absolutely free to use your professional creativity!

wow!  love this.  a quick-fix real hotpot casserole.  thanks sis.  I treasure these quick yet complete main dish recipes as it saves me so much time.  My family will love this too.  InshAllah will try it this weekend.
