This muffin mixture (or batter) will stay in the refrigerator for 30 days.  Whenever you wanna bake some muffins for the kids or for yourself, just spoon the required amount into a muffin tray and bake.  Ideal in the month of Ramadan for Iftari!

Ingredients for the muffin batter

2 cups bran

2 and a half cups flour

2 and a half tsp bicarbonate of soda or baking powder

Half cup oil

2 cups milk (if this feels too much, use as much as needed to make a smooth mixture)

2 eggs

1 cup brown sugar

Three-fourth cup raisins

Three-fourth cup broken walnut pieces


Method

Beat oil, milk and eggs with sugar then add this to the dry ingredients and store in an airtight plastic container.

When required bake at 180 degrees (pre-heated) for 10-12 minutes.
