BismAllah .. salaams folks!  Welcomed to my new recipe of rice, beans and meat  Smiley  Try it now.  If you like it, set the recipe aside for your Ramadan menu.  It's pretty simple to prepare, a light recipe and can be put under the health food category.  Feel free to make variations or additions with your own favorite seasonings.

Let's start ....

For meat
Meat (lamb cubes) 3 lbs or 1 and a half kg
2 tb sp vegetable oil
1 bayleaf
1 cinnamon stick
Half tsp ground black pepper
Salt to taste
I tb sp garlic & ginger paste
6 cups water

For rice
3 cups white basmati rice
3 tb sp vegetable oil
1 large onion, finely chopped
1 cup frozen broad beans or chopped fresh green beans
4 cardamoms
Half tsp ground black pepper
Salt to taste

Heat oil.  Fry meat till golden brown seasoned with bayleaf, cinnamon, black pepper, ginger garlic paste and salt.  Add 6 cups water and simmer on low heat for 2 hours till meat is tender.  Remove from heat.   When a little cool, remove the meat and keep it separately.  Measure the stock.  If it's less than 6 cups, add a little water to make it 6 cups.   Keep aside.

In another cooking pot, heat oil and fry the sliced onion till golden.   Then add cardamoms, pepper, salt and beans and cook for a couple of minutes.  Lastly, put in the rice and mix well.  Add the 6 cups of stock and cook on low heat for 20 mins or until the rice is done.

Put the rice on a flat serving plate and arrange the cooked meat cubes over it.

A suggestion .. if you prefer to use fresh chopped green beans instead of the frozen one, then it might be a good idea to boil them a little and then put them into the rice while preparing the fried rice.

This one contains peas instead of beans and with more color using spices like bit of red chilli powder, turmeric and paprika.  Good variations.
