I've eaten tons of fudge but really don't have a clear idea what it consists of  Cheesy   Is it the same as what is also known as homemade 'milk toffee?'

I guess it's not too different from homemade milk toffee.  I too have eaten lots a fudge, love it really, but somehow never got around to make it myself.  However, my younger sister is a fudge expert.  So I have a perfect idea how it's made ,, but that doesn't mean I can't mess it up if I try making it myself  Grin

You know, there's no such single separate or independent item labelled as "fudge," but fudge is actually the name of a dessert or sweetened preparation with a recipe of its own. 

There are 2 kinds a fudge - vanilla and chocolate.  Vanilla fudge is made of evaporated milk, sugar, butter and vanilla essence.  If you like, you can add chopped nuts.  Chocolate fudge is made of evaporated milk, broken pieces of dark chocolate bar, sugar, and butter.  If you like you can add nuts which may include blanched broken almonds or pistachios.

Ah!  i see.  okay, thanks so much dear sis.  This is what I wanted to know.  I didn't know if fudge was some kinda ingredient by itself.  That was the issue confusing me.  Just hoping over to see the recipe  teethsmile

You know, fudge is exactly the same as what we call "barfi" ( برفی ) in Pakistan.   It's primarily evaporated milk.  Only the flavors vary in different cultures.  In the West they flavor it either with vanilla or chocolate and sometimes use walnut pieces.  Barfi is flavored with saffron essence called kewra and garnished with almond or pistachio slices.  Lots of details on barfi at Sister Heba's post here.
