Ok folks, after discussing
what fudge is, here are the recipes for the preparation of chocolate and vanilla fudge.
Chocolate fudge:Ingredients 1 1/2 cups sugar
2/3 cup (5 fl.-oz. can) Nestle carnation evaporated milk
2 tablespoons butter
1/4 teaspoon salt
12 ozs. dark chocolate bars, coarsely chopped
1/2 cup coarsely chopped shelled pistachios or toasted almonds,
1/2 teaspoon vanilla extract
Directions LINE 8-inch-square baking pan with foil.
Combine sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes or until quite thick. Remove from heat.
Stir in chocolate, nuts and vanilla extract. Stir vigorously for a couple of minutes or until chocolate pieces are melted and mixture is thick. Pour into prepared baking pan. Sprinkle with some remaining nuts over top of fudge; carefully press nuts into the fudge. Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.

Vanilla fudge: This sugar-filled dry dessert makes a perfect gift or an after dinner treat.
Ingredients - Milk, sugar and unsalted butter in same quantities as for chocolate fudge or slightly more.
- Grease baking pan with foil in the same way as for vanilla fudge.
Directions Put the milk, sugar and butter in a heavy-based saucepan. Heat slowly, stirring all the time, until the sugar has dissolved and the butter melted.
Bring to the boil and boil for 15-20 minutes, stirring all the time.
When the mixture reaches the angel hair stage (that is, thickens considerably), remove from the heat and stir in the vanilla extract. Leave to cool for 5 minutes.
Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears.
Pour into the prepared tin and leave to set at room temperature (do not put it in the fridge).
Once set, cut the fudge into small squares and store in a sealed container.
