Ok folks, after discussing what fudge is, here are the recipes for the preparation of chocolate and vanilla fudge.

Chocolate fudge:

1 1/2 cups sugar
2/3 cup (5 fl.-oz. can) Nestle carnation evaporated milk
2 tablespoons butter
1/4 teaspoon salt
12 ozs. dark chocolate bars, coarsely chopped
1/2 cup coarsely chopped shelled pistachios or toasted almonds,
1/2 teaspoon vanilla extract

LINE 8-inch-square baking pan with foil.

Combine sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes or until quite thick. Remove from heat.

Stir in chocolate, nuts and vanilla extract. Stir vigorously for a couple of minutes or until chocolate pieces are melted and mixture is thick. Pour into prepared baking pan. Sprinkle with some remaining  nuts over top of fudge; carefully press nuts into the fudge. Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.
Vanilla fudge:

This sugar-filled dry dessert makes a perfect gift or an after dinner treat.
- Milk, sugar and unsalted butter in same quantities as for chocolate fudge or slightly more.
- Grease baking pan with foil in the same way as for vanilla fudge.
Put the milk, sugar and butter in a heavy-based saucepan. Heat slowly, stirring all the time, until the sugar has dissolved and the butter melted.
Bring to the boil and boil for 15-20 minutes, stirring all the time.
When the mixture reaches the angel hair stage (that is, thickens considerably), remove from the heat and stir in the vanilla extract. Leave to cool for 5 minutes.
Beat the mixture with a spoon for a few minutes until it starts to thicken and the gloss disappears.
Pour into the prepared tin and leave to set at room temperature (do not put it in the fridge).
Once set, cut the fudge into small squares and store in a sealed container.
You can also watch this video on how to make vanilla fudge at the following link.  This is where I got the recipe from but I made some changes in the quantities of ingredients in accordance with my sister's recipe .. which I 'stole' from her offline recipe file she left off at our place  Grin

If you have succeeded in making it well, then enjoy eating with kids, family and friends Cheesy

Bow wow! This will get my kids, neices and nephews dancing all around  Cheesy

Well, it doesn't sound too hard to make.  Might be just a bit cumbersome because u gotta keep stirring till it thickens.  I just hope the hot mixture doesn't splutter.  Then i'll need to wear a cotton glove while preparing it  Grin
It's just great, both recipes.  I'll try with the vanilla one cause it seems more simple.

Thanks a billion sis.

No problem sis, I'll move it there.

Aren't these recipes yummy?!    And did you know, u can also make fudge in the microwave.  Never tried it but I got the recipe from a journal sometime back.  Make a note of it if you like:

Powdered Sugar, 2 cups (or make it a bit less if you prefer)
Milk, cup  (half and half or evaporated / condensed canned milk)
Butter, cup   (you can try unsalted margarine to make it healthier)
Vanilla, half teaspoon
Cocoa, cup
Nuts (chopped), cup

In a bowl, mix powdered sugar and cocoa.  Add milk and butter/margarine to it.  The recipe says not to stir the mixture, don't know why.  Heat it in the microwave for 2 to 3 minutes on high.  Then add vanilla and nuts.  Now stir the mixture till ingredients are well blended.  Pour the mixture in a dish and chill in the fridge for 30 to 40 minutes.  Take the fudge out of the fridge, cut and serve.

There you are ......   Smiley

Really don't know if it's gonna turn out that nice ..

Btw ,, you can also prepare vanilla fudge with same recipe, just omit the cocoa.
