For a home full of kiddies, this is the quickest and simplest evening treat you can prepare in your kitchen without going to the bakery to fetch something.  At present, in the month of Ramadan, we're enjoying it as a midnight treat with a cup of tea before retiring to bed. 




Ingredients:

    1 cup flour
    1/2 tsp baking powder
    1/4 tsp salt
    1/2 cup melted butter or unsalted margarine
    1 cup packed brown sugar
    1 egg
    1 tsp vanilla extract
    1/2 cup chopped walnuts
    1/2 cup chocolate chips


Preparation:

Line a 8x8 baking pan with foil,.   Preheat oven at 350 F.

You will need 2 bowls.

In a medium bowl, combine the flour, baking powder and salt. Whisk them together until everything is mixed, then set them aside for a moment.

In a large bowl, combine the melted butter or margarine and the brown sugar and whisk it together. One of the things that separates this recipe from regular chocolate chip cookies is the use of melted butter instead of solid butter. Add the egg and the vanilla extract, and whisk until it's a smooth batter.

Pour the dry ingredients into the wet ones, and stir with a whisk or a spatula until all the flour disappears. It should look and smell like a delicious cookie dough by this point.  The batter should be somewhat thick.

Add the chopped nuts and chocolate chips, and stir until they're evenly dispersed.

Scrape the batter into the prepared pan and smooth it into an even layer with a spatula.

Bake the blondies for 20-25 minutes at 350 degrees until the top is golden and set in the middle. Let it cool completely on a wire rack.

Lift it from the pan using the foil as handles. Use a large sharp knife to cut it  into small squares. To get the cleanest cuts, run the knife under hot water and wipe it clean whenever it starts to get too messy.

Wow sis!  This looks yummy and simple.  InshAllah, I'll be going to the stores tomorrow.  I'll get these ingredients and try baking a tray of blondies.

Wah!   MashAllah!!  looks mouth watering!!!!  Never made it before but I'm pretty sure it's gonna be a hit with the kids.  Brown sugar cakes, cookies etc. have a special flavor even we can't resist, let alone kids  Cheesy  I'm also gonna try it soon, InshAllah.  Brown sugar is the only thing not available in our kitchen at the moment.  So maybe I'll tell my husband to go and fetch it tomorrow from the bulk store nearby.  Sister Zainab, if you try it first, let me know if it's a success or disaster  Grin

Okay .. green light for sister Heba.  It was a success  Cheesy  Just try to stick to exactly the same measurements. 

However, when I make it next, and InshAllah I will soon because I have sufficient left over ingredients, I'll use less of the chocolate chips.  Unless one likes a very chocolate taste, half cup chocolate chips makes it taste too chocolaty. 

And strangely enough, this yummy tastes better the next day and beyond.

MashAllah!  mubarak sis Grin  and thanks for the prompt feedback.  Okay, I'll keep the chocolate chips a bit less than half cup .. and maybe increase the quantity of walnuts a little.  As I can see in the pic, there too it doesn't seem too much chocolate was used.  I can hardly see any dark brown patches.

Congrats sis Zeynab  Smiley  Yeah, I agree, if you're not a 'chocolate person' you might find half cup choco chips too much.  No problem.  You can replace it with something else e.g. broken almond or peanut pieces or simply use 1 cup walnut instead of half & half with choco chips.  Also I observed that chocolate chips makes the blondies much softer and you have to wait for 3 or 4 hours for it to cool until it starts feeling crunchy.  My kids are crazy about chocolaty desserts .. though my husband and I would prefer less of it.  But for the kids we too keep taking over doses of chocolates  Cheesy

SUCCESS Folks !!!!  Cheesy Grin Cheesy

I followed the advise I was given  .. using very little choco chips and almost one cup walnuts.  Came out fabulous. 

There's one thing about blondies though.  After taking it out for the oven, it must be allowed at least 3 or 4 hours to cool before you cut it.  And I suppose that's why, as sister zeynab said, it tastes better the next day.
