Dinner time folks!  Grin   We're gonna try out a lovely chunk of meat loaf tonite.

Meatloaf is a wonderful traditional main course to add to your dinner menu.  And it's very versatile too!   The dish is originally European and is supposed to have begun as early as the 5th century, though nowadays it's common everywhere.

This is a basic easy meatloaf recipe, and a delicious one .. believe me Smiley

An added advantage with meatloaf is, it's great as leftover.  Meatloaf slices make great sandwiches for lunch at your workplace.

The loaf shape is formed by either cooking it in a loaf pan, or forming it by hand on a flat baking pan.  I prefer using a loaf pan.



This is a slightly Pakistani-styled meat loaf .. spicy and tangy.  The pic is taken from Facebook. Though I've followed similar recipe for meatloaf many times, unfortunately I don't presently have any pics of my own preparations. But will InshAllah put them up sometime in future.



Ingredients:

1/2 kg or 1 lb lean minced beef
3 tbsp oil
2 medium onions, chopped
2 fresh tomatoes, finely chopped
2 tsp ginger/garlic paste
3 tbsp tomato paste
Half tsp chilli powder
1/4 tsp black ground pepper
1 tbsp yoghurt, beaten
1/2 tsp turmeric powder
1 tsp cumin powder
juice of half a lemon
3 tsp coriander paste
2 eggs
3-4 tbsp breadcrumbs
2-3 tbsp ketchup


Preparation:

Heat the oil in a pan, add the onions and saute till it looks trasnparent and soft.  Add  ginger/garlic paste and then the minced meat.   Cook till it turns quite brown.  Add salt, fresh chopped tomatoes, tomato paste, tumeric, chilli, cumin and coriander paste.

Let this simmer covered until all the water is absorbed.  Then add yoghurt and stir.  Keep cooking it down on medium to low heat until it dries up and starts to stick a little to the bottom of your pan.

Turn the cooker off and add the black pepper and lemon juice.  Mix well and cool for 15 to 20 minutes.

Next, beat the 2 eggs in a bowl and mix it with the meat mixture.  Mix well.  Then also put in the breadcrumbs and mix.

Pour this meat mixture into an oven proof dish.  It would be best to use a well greased aluminum foil loaf tin. Bake the minced meat loaf  for 35 minutes or until it darkens and solidifies and has a lovely brown color at 200C.  Remove and add ketchup on top.  Return to the oven for 5 more minutes.  Let it cool for  while.

If you want you can turn it over on a flat dish, that is, if you don't mind having the ketchup topped side at the bottom.   Then, slice it and garnish with chopped fresh coriander.  Or, line the loaf tin with aluminum foil before putting in the meat mixture to bake.  When done, cool and lift up the foil lining.  Then carefully transfer the baked meat loaf on a flat dish.

It can be served either with mashed potatoes or french fries with brown gravy.  I prepare my gravy (as a dip for potatoes) with brown gravy mix I buy at the Bulk Barn store.   You can also add dinner rolls or croissants.

It's YUMS!

And here's a suggestion reflecting the versatility of this dish.  If you want to make an Italian style meatloaf, you can mix veggies with it.  If you have leftover fresh veggies in your fridge and you're in no mood to cook them, simply utilize them into your meatloaf.  Or, you can simply used frozen mixed vegetables after thawing them.  I prefer the frozen mixed veggies.  

Also, instead of ketchup, you can sprinkle shredded cheese on top of the meat loaf before baking.

You can also use ground chicken instead of ground beef.

This sounds incredibly mouth-watering.  Super!  I think using a loaf tin is necessary.  Shaping it into a loaf and baking it on a flat oven proof dish might not hold the loaf and spread it over a bit on the dish  .. would it not?

I think I'll try the one with veggies.  I'll follow the same recipe as the basic meat loaf you put up, plus mix the assorted frozen veggies with the ground mince.  Might also use chicken instead of beef.  The Halal shop from we buy our meat sells excellent lean ground chicken too.

You bet sis, it's mouth watering and mesmerizing when you sit down to eat in an empty stomach  Cheesy

It's better if you use a meat loaf tin for then you get a better loaf shape.  However, it can also be shaped into a loaf with hands.  It won't spread across the dish or flatten out while baking, because you are using 2 eggs per every 1 lb of minced meat.  So that holds it well enough as it bakes through.
