Salams folks!  Smiley    I'm looking for making spaghetti bolognese with completely Halal ingredients.  I know it's generally used with minced beef, but I want to make it with chicken - not minced chicken but boneless chicken.  And idea how to prepare it?

Salams and hio sis Smiley  Insh'Allah I can help you with that.  Spaghetti bolognese is quite popular with my family with 100% Halal ingredients of course.  I mostly prepare it with chicken pieces because my parents, my husband and me are all trying to cut down on red meat. 

You might need to put down quite a few items in your next grocery shopping list Smiley

This recipe will be enough for three or four people.  You can accordingly measure the ingredients, depending on the number of folks eating. 

INGREDIENTS:
Boneless chicken breast - 2 , cut into big chunks.  If you like you can also use chicken with bones, 4 large pieces.

Spaghetti

1 can stewed tomatoes undrained
 2 tbsp Philadelphia cream cheese or grated cheddar or mozzarella
1 onion, peeled and finely chopped
1 green pepper, seeded and finely diced
ginger & garlic paste
1 tbsp mixed dried herbs
Little vinegar, salt and black pepper

METHOD:
First boil the chicken with salt, pepper, ginger & garlic paste in a little water till the water is dry and chicken is tender.  Break the chicken into smaller pieces and keep aside.  If you're using chicken with bones, remove meat from bones. 

Boil the desired quantity of spaghetti, mix with a teaspoonful of margarine and keep aside.

1)  Heat the oil in  large pan and cook the onion and green pepper until onions begin to soften and look quite transparent. 

2)  Stir in ginger & garlic paste and herbs.   Cook for 2 minutes. 

3)  Then add canned tomatoes, dash of vinegar, salt & black pepper.  Mix well and simmer for about 30 minutes till thick. 

4)  Add the boiled pieces of chicken and creamed or grated cheese 

5)  Lastly, spread the boiled spaghetti on a large flat dish and spread the prepared bolognese sauce over it. 



That's it, you're done!  Smiley

You can also use additional spices like pinch of nutmeg and a little pasta sauce, and garnish it with chopped fresh green coriander.  You can also some add boiled and diced carrots.  These are all optional items. 



Please note, this one in the pic is a bit dry.  Some people like it dry.  You can even keep it a bit more moist if you prefer.  That can be done by adjusting the simmer time.  Instead of leaving it to simmer for 30 minutes, simmer for a shorter period of time.

Aww!  thank ya ma sis!!  Cool  Thumbsup  This is exactly the kinda recipe I wanted.  InshAllah will be inviting a neighbor and her family for dinner next week.  She's Muslim lady from Yemen but she doesn't eat meat.  I won't say she's vegetarian because she does take fish and egg.  So I was thinkin, I'll make this bolognese stuff with chicken as one of the dishes but for her I'll separate a little of the bolognese and won't add chicken.  Instead I'll add some boiled carrots and beans along with the green pepper .. how about that?

Lovely dish, sisters.  I too will try it .... will remember to get the ingredients when I go next for grocery shopping.

Sister Heba, I think your idea for making that veggie based bolognese for your neighbor who doesn't take meat sounds fine.  After simmering when the sauce becomes thick separate a little in a small cooking pot and mix a wee bit of boiled carrots and beans while mix chicken in the larger portion for the rest of you.

Went grocery shopping yesterday.  Got all the stuff required for spaghetti bolognese Smiley  All set to cook it today, InshAllah.  Will 'publish' the results  Grin  even if it turns out bad  Cheesy Cheesy
