An excellent side dish to cool off on a hot summer day.  You can eat the entire bowl, you neither have to worry about extra workouts to burn calories nor will you need to wake up in the middle of the night to take an anti-acid.


The delicious Nicoise Salad. 

Ingredients
4 firm tomatoes
Half cucumber sliced
8 oz green French beans, boiled crisp
2 spring onions, chopped
A small bunch of lettuce leaves
One-eighth pint French dressing
2 cups boiled boneless chicken pieces
2 hard boiled eggs
1 tbsp coarsely chopped corriander leaves

Method
Quarter the tomatoes, slice the cucumber, cut the beans into short lengths and chop the spring onions. 

Wash the lettuce.  Tear into strips and arrange along the base of the salad bowl. 

Add chicken to the vegetables.

Sprinkle dressing, toss lightly and spoon over the lettuce.

Cut eggs in half lengthwise and arrange around edge of the salad.

Sprinkle with corriander and serve.

Be careful not to over blend or the appearance may become messy. 

If you like, you can replace French dressing with any other moist dressing of your choice.  However, a transparent dressing will make the salad look prettier.

Gee, absolutely gorgeous.  Why just a side dish?  It will suffice as a main dish if made in slightly larger quantity and probably with a couple of more nibbles for the kids like some dinner rolls or crossiants and some potato cutlets, and perhaps some ice-cream for dessert .. this would make a complete dinner especially for the summer.  With a warmer dessert, it can be a good dinner even in the winter months.

Can I use canned tuna instead of chicken or a combination of both?

Sure you can use it.  Just make sure that the tuna is completely drained.  Keep it in the colander for 10 to 15 minutes before putting the chunks of it into the salad.  You can even combine chicken and tuna both into the salad.  Since I'm not fond of sea food, I use only chicken.  But it's all upto individual choice.
