Husseyn: Salaam all.  Today is 1st Dhul Hijja 1443 (corresponding to June 30, 2022).  Day of Arafah will be on 9th Dhul Hijja (July 8th) and Eid-al-Adha on 10th Dhul Hijja (July 9th). Fasting on the Day of Arafah is not obligatory, however it's a good day to observe a nafl fast for those healthy enough to do so.  Insh'Allah.

Salams all  Smiley   Visiting our Food Diary after ages !!   

I found one of the most mouth-watering desserts last week, tried it yesterday and it turned out  W-O-N-D-E-R-F-U-L !!!  Cheesy     I thought of sharing it here with you guys right away.   Since we have a big family, I made about double the quantity mentioned in the recipe.  It became such a hit with the kids that just one piece was left for my husband and me which we had to share - 50/50  Grin

Also called Orange pie bar.

These bars are just like lemon bars except with an orange filling. It’s basically pie in bar form, which means they are super easy to make! The flavors are awesome – so bright and fresh, and the buttery, slightly sweet crust is the perfect compliment.

INGREDIENTS:

Powdered sugar (for sprinkling)
Zest of one orange
Filling:
4 eggs
1 1/3 cup granulated sugar
1/2 cup fresh squeezed orange juice
4 tablespoons all purpose flour
1 teaspoon baking powder (if you want you can make it less)
Crust:
3/4 cups cold unsalted butter (cubed)
1/3 cup powdered sugar
1 1/3 cup all purpose flour

DIRECTIONS:

Crust
Step 1
Preheat oven to 350
In a medium bowl add butter, flour, and powdered sugar. Cut the butter into the flour and sugar until crumbly. Press the mixture into a greased 9x13" pan. Bake for 12 minutes.
Filling
Step 2
In a large bowl beat the eggs with orange juice and sugar. Add the flour and baking powder and mix well. Pour into baked crust and bake for 20 minutes or until edges just start to brown. Let cool to room temperature then chill in refrigerator.
Step 3
Add the zest of an orange and a sprinkling of powdered sugar just before serving.


And now, you too try making it as I did before you sit down to enjoy!  Cheesy

Wa'salam sis  Cheesy   Wowie!  This is super duper!!   Cool   Cheesy   Love it.  Now tell me sis, can I add one more ingredient to the filling .. that is some sweetened condensed milk?  Normally condensed milk is a popular additive for preparing lemon pie fillings.  Secondly, how about using Bulk Barn's flaky-pie-mix flour for preparing the crust?  I've made lemon & jam tarts and also crusts for macaroon pie with it.  Came out perfect with considerable saving of time.

Glad you like it sis.  And left overs can be covered and stored, no need to refrigerate.

Well, in fact I used the flaky crust-pie from Bulk Barn  Grin  It's saves time and tastes great.  Therefore go ahead by all means.

About using sweetened milk for filling .... umm .. not sure  Huh  I know it can be used for lemon pie fillings as fresh lemon flavor goes well with condensed milk.  It might even combine well with fresh orange tang.  But I would suggest follow the exact recipe the first time.  If it comes to your liking, the next time you can make that slight adjustment and mix a little of the condensed milk .. not the whole can as I would advise .. and accordingly adjust the quantity of sugar a bit because condensed milk is already sweetened.

Acha, okay .... got ya point sis. So I'll use flaky crust pie-mix flour but not condensed milk this time.  If it turns out good without it, then will InshAllah try out with a bit of condensed milk next time to make a comparison between the two.  Makes sense as I'll also be more confident the second time IF it comes out well the first time .... InshAllah.

I didn't know about this flaky crust pie-mix.  Is it available at Bulk Barn?  Won't it make the crust too scaly .. something like danish pastries.  But these pie-squares are supposed to have a crusty base or pastry, right?

Yeah sis, it's available at most Bulk Barn stores .. at the flour section.

And no, it won't make it too scaly.  Actually it's a 2-way flour mix.  That's why I find it so handy.  It will get flaky & scaly if you roll it out in layers with butter in between the layers (though it already has vegetable oil mixed in it) and then bake it.  But if you roll it out and bake without folding it into layers, it comes like the regular pastry crust.  That's the way it needs to be done if you're making orange or lemon squares.
