I 'stole' a fantastic lemon cookie recipe for you guys from Imgur social media  😆   
Usually this isn't the exact place where you can expect all recipes to be Halal.  So you gotta nit-pick.  Fortunately I found this lemony recipe to be fully Halal after going through the ingredients very carefully.  And the ingredients are fairly simple.  I got them all through online grocery shopping.

Yeah they're playing some stupid music with the video .. just ignore or mute it.   This video link is only for the purpose of following the practical demo of the method.


Nonetheless, I will also copy & post the ingredients and method, just in case this video is no more there some day.

Remember, you'll need a grater or shredder we generally use for shredding a bar of cheese.  Most of you must be having it.  You'll need it here for shredding the lemon skin into zest or peel.


Ingredients:

2 cups all purpose flour
2 large lemons for zest and juice
1 tsp baking powder
¼ tsp Diamond Crystal kosher salt .. OR you can simply use regular table salt
¾ cup granulated sugar
⅓ cup unsalted butter (lightly melted once room temperature) [can substitute with canola or corn oil for health reasons]
1 tsp vanilla extract
2 large eggs (preferably room temperature)
Pinch of yellow food coloring (optional)

For coating the cookies:
½ cup powdered sugar  (another term for icing sugar)
½ cup granulated sugar



Instructions:

Preheat the oven to 375 degrees Fahrenheit. Then line a baking tray with parchment paper and set it aside.

Take a mixing bowl, add flour, baking powder and salt. Whisk it well. Set that aside.

In a separate bowl, add the sugar and lemon zest.  Next, add the juice of 2 large lemons, vanilla extract and melted butter and whisk to combine. Now add the eggs and food coloring. Whisk until completely mixed.

Time to pour the dry ingredients. Use a spatula to mix until a dough forms. Cover with plastic wrap and chill in the fridge for a minimum of 1 hour or overnight.

Once chilled,  scoop out 8 large cookie b@lls. Use your hands to roll into b@lls. Coat in the caster sugar first, then coat in the powdered sugar. It will help the powder sugar to stick better. Place it on baking trays and bake it for 20 minutes in the middle rack of your oven.

Once baked, let it cool for 5- 10 minutes. Enjoy.

But in the pic and video they are showing more of oranges than lemon. 


Can these crinkly cookies also be made with orange following the same instructions?

Yeah, I observed that too.  Some oranges around the kitchen counter.  I guess that's just for the purpose of making the image more attractive.  Lemon is also there .. the person is cutting a lemon.  This is definitely a lemon recipe.   But I have no doubt you can make the same crinkly stuff following the same recipe with orange as well.  You only may need to adjust the quantity of sugar a bit cause oranges are sweeter than lemon.
